Operation Frontline – One More Family Reached…this time, Secretary of Agriculture Vilsack’s!

A surprise visitor appeared at a recent USDA Chef in the Garden demonstration being conducted by Share Our Strength and its local Operation Frontline partner, the Capital Area Food Bank – none other than Christie Vilsack, wife of Secretary of Agriculture Tom Vilsack. After picking up a pumpkin at the nearby Farmer’s Market, Mrs. Vilsack stopped by our tent to sample some ABC Salad – which contains lots of seasonal vegetables like green cabbage, carrots, apples and beets.
Mrs. Vilsack chuckled as she shared a funny story about hanging a painting of beets on her husband’s office wall – and how she told him “if you’re gonna say you don’t like beets, you’ll have to look at them now!” Upon tasting our delicious ABC Salad, Mrs. Vilsack proclaimed that she could sneak them in this way without her husband knowing it, and that he would then have to admit liking beets after all.
Case in point on how Operation Frontline’s cooking-centered, nutrition education teaches families new and delicious ways to incorporate healthier foods into their diets. If our ABC Salad can help Mrs. Vilsack get her husband to eat more beets, then perhaps it will help other families successfully add more fruits and vegetables to their diets as well.
